Rainbow Detox Salad

This easy delicious chopped detox salad is loaded with ingredients to remove accumulated toxins and excess weight and helps to support the body’s detox pathways.

Ingredients
  

FOR THE SALAD

  • 2 cups broccoli
  • 1 cup red cabbage roughly chopped
  • 2 cups cauliflower roughly chopped
  • 2 celery stalks diced
  • 1 cup carrots diced
  • 1/2 cup fresh cilantro [optional]
  • ½ cup pepitas or nuts of choice
  • 1/3 cup dried fruit of choice [cranberries apricots]

FOR THE DRESSING

  • ½ cup lemon juice
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar [optional]
  • ½ teaspoon garlic powder [or 1 garlic clove minced]
  • 2 tablespoons raw honey
  • 1 tablespoon fresh ginger grated
  • 1/2 teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions
 

FOR THE SALAD

  • Chop all the ingredients and add to a large bowl. I threw some of the broccoli and cauliflower into my food processor to break them down a bit.

FOR THE DRESSING

  • Add all the ingredients to a mason jar and shake or add all ingredients to a bowl and whisk together until combined. To increase the flavour you can refrigerate the dressing for up to an hour but you can also eat it immediately.
  • Toss the salad with the dressing.
