For the chicken

about 6 boneless, skinless chicken thighs, cut into bite-size pieces

For the sauce

arrowroot flour or cornstarch
Instructions
For the chicken
Cut the chicken into chunks, then toss in a bowl with arrowroot flour or cornstarch. Use enough to coat the chicken evenly.
Spray air fryer tray, spread chicken in an even layer so there's no overlap, and spray with cooking spray.
Air fryer chicken at 390F for 15-20 minutes, flipping halfway through, spraying with a bit more oil.
For the sauce
While the chicken is frying, make sauce. Add all ingredients to a saucepan (up until ginger), whisking until well combined.
Bring to a low boil and once the sugar has dissolved, whisk in the water and arrowroot flour or cornstarch.
Mix in the sesame seeds. (The sauce should only take about 5 minutes or less to make on the stove and then an additional 5 minutes to thicken up.)
Remove the sauce from the heat and set aside for 5 minutes to thicken.
Once the chicken is done, remove from the air fryer and place in a bowl, and then coat with the sauce.
