Preheat oven to 400 degrees.
Wrap washed beets (including skin) in foil and roast for 45 minutes or until the beets are tender (use fork to check). fork tender. Let the beets cool and then remove the skin using a paper towel.
Cut beet into quarters and add to food processor along with remaining ingredients. Puree until well combined.
If you have an ice cream machine, add to your ice cream machine following manufacturers instructions. If you don't have an ice cream machine, you can simply place in small baking pan or bowl and freeze. Just make sure you stir it every 30 minutes or so you can get a more creamy texture. Freeze for about 3 hours.
Scoop and add your fav toppings! I added cacao nibs and hemp seeds. Shredded coconut would be great too!
