Lemon Coconut Bites
Healthy lemon coconut bites bursting with juicy lemon, shredded coconut and almonds.
- 2 ¾ cups sweetened shredded coconut
- ½ cup natural unsalted unroasted almonds
- 2 tbsp honey
- 2 tbsp coconut oil
- 1 large lemon – juice and zest
Place all ingredients except ¾ cup shredded coconut into your food processor or blender in the order listed above.
Pulse until the mixture is smooth. Be careful not to pulse too much or else you’ll end up with butter.
Shape the mixture into balls about the size of a quarter.
Place ¾ cup shredded coconut on plate and roll in coconut.
Place on a tray or large plate and chill in the fridge until firm, about 1 hour.
