Lemon Coconut Bites

Healthy lemon coconut bites bursting with juicy lemon, shredded coconut and almonds.


  • 2 ¾ cups sweetened shredded coconut
  • ½ cup natural unsalted unroasted almonds
  • 2 tbsp honey
  • 2 tbsp coconut oil
  • 1 large lemon – juice and zest


  • Place all ingredients except ¾ cup shredded coconut into your food processor or blender in the order listed above.
  • Pulse until the mixture is smooth. Be careful not to pulse too much or else you’ll end up with butter.
  • Shape the mixture into balls about the size of a quarter.
  • Place ¾ cup shredded coconut on plate and roll in coconut.
  • Place on a tray or large plate and chill in the fridge until firm, about 1 hour.
