Salted Caramel Protein Balls

They’re sweet, they’re sticky and they taste like caramel without the guilt. These Salted Caramel Protein Balls are the perfect healthy snack.
Prep Time 10 minutes

Ingredients
  

  • 15 pitted dates [about 1 cup]
  • 2 tablespoons almonds
  • 1 scoop Genuine Health Fermented Vegan Protein Powder vanilla flavour
  • 1 tablespoon chia seeds [optional]
  • 1 tablespoon of almond butter
  • 1 tablespoon maple syrup
  • ¼ teaspoon salt
  • ½ cup flaked coconut

Instructions
 

  • Soak the dates in boiling water for 10 minutes.
  • Place coconut on a plate and set aside for rolling.
  • Drain the dates, reserving 1 tablespoon of the soaking liquid to add to the mixture.
  • Add dates and almonds to food processor blitz until broken down.
  • Add remaining ingredients including the reserved liquid blitzing until well combined.
  • Roll into balls [mixture will be a bit sticky] and coat in the shredded coconut.
  • Pop in the freezer for 30 minutes to set then eat and enjoy!
  • Keep stored in a covered container in the fridge to keep firm
