Air Fryer Sesame Chicken

Ingredients
  

For the chicken

  • 1 ½ pounds about 6 boneless, skinless chicken thighs, cut into bite-size pieces
  • 1/2 cup arrowroot flour or cornstarch

For the sauce

  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 1/3 cup coconut palm sugar
  • 1 teaspoon chile paste or red chili flakes optional
  • 2 teaspoons sesame oil
  • 2 tablespoons coconut oil melted
  • 1 garlic clove minced
  • 2 teaspoons minced fresh ginger
  • 1 tablespoon toasted sesame seeds
  • ¼ cup water
  • 1 tablespoon lime juice juice of one lime
  • 1 teaspoon lime zest zest of one lime
  • 1 tablespoon arrowroot flour or cornstarch

Instructions
 

For the chicken

  • Cut the chicken into chunks, then toss in a bowl with arrowroot flour or cornstarch. Use enough to coat the chicken evenly.
  • Spray air fryer tray, spread chicken in an even layer so there's no overlap, and spray with cooking spray.
  • Air fryer chicken at 390F for 15-20 minutes, flipping halfway through, spraying with a bit more oil.

For the sauce

  • While the chicken is frying, make sauce. Add all ingredients to a saucepan (up until ginger), whisking until well combined.
  • Bring to a low boil and once the sugar has dissolved, whisk in the water and arrowroot flour or cornstarch.
  • Mix in the sesame seeds. (The sauce should only take about 5 minutes or less to make on the stove and then an additional 5 minutes to thicken up.)
  • Remove the sauce from the heat and set aside for 5 minutes to thicken.
  • Once the chicken is done, remove from the air fryer and place in a bowl, and then coat with the sauce.
