Although… since it’s still blazin’ out as I type this, there is still plenty of time to enjoy delicious treats like this Beet and Honey Fro Yo.

Yes, that would be right, your girl Tru throwin down the beets in frozen yogourt. I, like you was a bit skeptical at first. If you’ve read some previous posts a lot of my best creations are simply by accident. Magic can happen in the kitchen when you have some excess ingredients on hand and mix a lil of this and a lil of that.

 

I had roasted some beets earlier in the week and I had a couple extras on hand. Feeling a little bit adventurous I decided to team them up with Greek yogourt.

My only regret is that I didn’t make a bigger batch, hence my little bowl in the pic. Actually this wasn’t even a planned post so I’m sorry that the pics aren’t the greatest. But after this little happy magic happened I just had to share it with you.

 

Beets are one of my fav foods. They are considered to be a grounding food because they are grown close to the earth. Other foods that are said to ground you are sweet potatoes, carrots, onions and radishes.

Beet and Honey Frozen Yogourt

Ingredients
  

  • ½ cup of Greek yogurt
  • 1 beet roasted and cooled
  • Drizzle of olive oil 1/2 – 1 teaspoon
  • 2 tablespoons honey
  • ¼ teaspoon sea salt

Instructions
 

  • Preheat oven to 400 degrees.
  • Wrap washed beets (including skin) in foil and roast for 45 minutes or until the beets are tender (use fork to check). fork tender. Let the beets cool and then remove the skin using a paper towel.
  • Cut beet into quarters and add to food processor along with remaining ingredients. Puree until well combined.
  • If you have an ice cream machine, add to your ice cream machine following manufacturers instructions. If you don't have an ice cream machine, you can simply place in small baking pan or bowl and freeze. Just make sure you stir it every 30 minutes or so you can get a more creamy texture. Freeze for about 3 hours.
  • Scoop and add your fav toppings! I added cacao nibs and hemp seeds. Shredded coconut would be great too!
