This is important because their high fiber content slows your body’s absorption of the sugar, which minimizes their impact on your blood glucose levels.
They rank 64 on the glycemic index scale, which is a measure of how quickly foods raise your blood sugars. A GI of 55 or less is considered low, and beets don’t exceed that by much.

Velvety Beetroot Latte
Ingredients
- 1 small pre cooked beet
- ½ cup coconut milk
- ½ cup almond milk [or you can just do 1 cup non dairy milk]
- 1/2 cup water
- 1 teaspoon coconut oil
- 1/2 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon ground ginger or 1 inch piece fresh grated ginger
- 1/2 tsp pure vanilla extract
- 1 tablespoon raw honey or liquid sweetener of choice
Instructions
- Heat oven to 400 degrees. Wrap beet in foil and roast for about 30 -40 minutes, or until a fork easily pierces it (I usually just roast them as soon as I get home from the grocery store and keep in the fridge for smoothies and salads).
- Add all ingredients to blender and blend until smooth.
- Add mixture to a small saucepan on low heat and heat until warm. Drink immediately or if you like a frothier latte, return the mixture to your blender and give it a whiz for a few seconds until frothy.
