Too hot to turn on the stove? Summer is the perfect opportunity to be lazy with simple no cook meals. Perfect for busy weeknights. The best time for salad is in the summer. Make a big salad with fresh greens [I like mixing kale or spinach with punchier greens like arugula], beans like chickpeas, toss in a bunch of vegetables like red peppers, and even some fruit like strawberries or mangoes like in this salad. Toss everything together in a simple vinaigrette.

When you hear layers it typically means bundling up from the cold but in summer it’s all about layering foods like an outfit – think greens, quinoa, beans (or meat) and nuts – things you can assemble vs feeling pressured to follow a recipe. I also recommend making in big batches so you can layer throughout the week or double up on lunches.
