Salted Caramel Protein Balls
Ingredients
- 15 pitted dates [about 1 cup]
- 2 tablespoons almonds
- 1 scoop Genuine Health Fermented Vegan Protein Powder vanilla flavour
- 1 tablespoon chia seeds [optional]
- 1 tablespoon of almond butter
- 1 tablespoon maple syrup
- ¼ teaspoon salt
- ½ cup flaked coconut
Instructions
- Soak the dates in boiling water for 10 minutes.
- Place coconut on a plate and set aside for rolling.
- Drain the dates, reserving 1 tablespoon of the soaking liquid to add to the mixture.
- Add dates and almonds to food processor blitz until broken down.
- Add remaining ingredients including the reserved liquid blitzing until well combined.
- Roll into balls [mixture will be a bit sticky] and coat in the shredded coconut.
- Pop in the freezer for 30 minutes to set then eat and enjoy!
- Keep stored in a covered container in the fridge to keep firm
